Maocai is a specialty of Chengdu, which is made by blanching vegetables in a broth made with Chinese herbs and various seasonings. The vegetables are placed in a bamboo ladle, usually one ladle is one serving. After being cooked in a pot, they are placed in a bowl with various seasonings prepared in advance. A spoonful of broth is then added, hence the name "Maocai". Finally, some cilantro, chopped green onions and Sichuan-style fermented black beans are sprinkled on top, making it the most famous and distinctive snack in Chengdu, "Maocai".
