As a Pudong intangible cultural heritage, Zhoupu mutton is mainly prepared by poaching, using sheep under 3 years old. The skin is crispy, the meat tender, and it's fragrant without being gamey. Paired with scallion oil noodles, Shaoxing wine, and a touch of soy sauce, it's absolutely delicious to have a big bite of meat in the morning!
